Cooking with The Wright Times. Chilli Con Carni

I was previously asked to do a video the next time I made a Chilli Con Carni, so here it is.

We like our Chilli’s mildish so feel free to add chilli peppers ect to suit your own taste.

Ingredients:

1 x large white onion or 2 medium white onions
1 x red bell pepper
2 garlic cloves, or as I used, lazy garlic.
2 x table spoons chilli powder or chilli peppers to suit own taste
1 x table spoon of paprika
1 x table spoon of ground cumin
500g of minced beef
1 x beef stock cube / Oxo cube
1 x tin chopped tomatoes
1 x tin baked beans
1 x tin kidney beans
1 x 1/2 table spoon dried margoram ( not used in mine as I ran out )
1 x teaspoon white sugar
2 x table spoons tomato puree
Mushrooms
Worcester Sauce
Ground pepper

Plain white rice. ( apparently a chicken or beef stock cube can be added to the water when cooking the rice but I have not tried this yet )

Chicken and bacon risotto

We has a lovely meal tonight. If anyone is interested in giving it a go, let me know how you get on, and if you make any changes.

I have been asked for this recipe of other MFP users. Its a really simple meal but very tasty.
( Serves 4. Approx 850 calories on my meal per person, but will differ if you change the amounts )
4 x chicken breasts
5 x Unsmoked Rindless Back Bacon rashers
1 x Large white onion
150g closed cup mushrooms
2 x Oxo vegetable stock cubes ( makes min 700 ml stock. Adjust if required. We near enough doubled it to stop the risotto drying out during cooking )
300g Arborio Rice
2 cups ( 150g ) frozen garden peas
A small drizzle of extra virgin olive oil
2 teaspoons of garlic. ( we used lazy garlic )
1 large french bread stick ( divided by 4 people )

Its really easy to make. Cook the onions, add the chicken breasts and drizzle the extra virgin olive oil. Remove the rind from the bacon the dice the bacon and add to pan, Dice or slice the mushrooms and add, Add the Arborio rice, then add the stock, garlic and peas. Cook on a medium heat. Once it starts to bubble, reduce the heat to simmer.
Slice the bread and serve with the meal.

Nutribullet: Fruit and veg delight

Todays experimental recipe was lovely. Sweet, but not too sweet, just nice. This one goes down as my best yet. I like it so much I think I’m gonna call this Fruit and veg delight ( unless someone else can think of a better name for me to call it ). I think next time I might make it colder but adding an ice cube or make sure the fresh berries are chilled
